How to Make Chicken Quesadillas

Tasty and easy to prepare, quesadillas are a great addition to your menu, especially if your guest list includes children.  You can sneak in a few vegetables along with the cheese to make the quesadillas even more nutritious. 

Ingredients:
  • 4 large size flour tortillas
  • A block of Monte Rey Jack Cheese or already shredded cheese 4-5 cups if you love cheese.
  • Already Grilled Chicken breast strips (make it yourself or buy already made)
  • (Optional) You may add your choice of vegetables, ex: mushrooms, spinach, roasted bell peppers...

Preparation:

Shred the amount of cheese that you will need, about 4-5 cups.


Place tortillas on griddle.  Warm them, then flip to warm the other side, about 20 seconds on each side.  Add the cheese and the chicken.


Fold your tortilla and warm on each side pressing down firmly about 20 seconds or so for each side.


Remove quesadilla from the griddle.  Slice each half; a pizza cutter works well for slicing quesadillas.  Serve with guacamole, pico de gallo, and sour cream.  Garnish with cilantro leaves and small tomatoes.


These are mighty tasty and great for the summer.  Be creative and try different ingredients, I just finished making my son a fish & cheese quesadilla, he loves it!

Serve with margaritas, mojitos or homemade fruit juice and make it a theme night.
