I've been to a few places here and there, but I have to say that this is my absolute favorite place in the whole world.  The moment you step out of the car, it is breath taking, not to mention the many cute sheep around the area.  I've seen some incredible places in my lifetime, but nothing like this.  This is Mont St. Michel in France,  after a certain hour, the tide comes in and surrounds the place, so it looks like a tiny island.  To learn more about this beautiful construction go here.  Thank you Hugette and Louis for letting us stay at your bed & breakfast, you are wonderful.

Before getting married, I had begun my career in the Fashion world in NYC, in what others believe was the glamorous life,  because I worked with several celebrities, media etc...I gave it all up for a family life and couldn't be happier.  The reason, my hubbie was military and where he went, I went.

Sweet Red Peppers



Do you remember a few weeks ago I mentioned  The Garden...  The beautiful red bell peppers you see here are those you saw on my post from my bell pepper plant.  I am thrilled!  You see, these are my first peppers ever, grown by me, so I'm quite giddy about them.  
I love red bell peppers for their sweet flavor and their excellent source of vitamin A and vitamin C.  These sweet peppers are delicious raw, roasted, baked, stuffed, in salads, side dishes and more.  
  
 Did you know that the red bell pepper is also a great source for home remedies for ailments such as Tonsilitis, High Cholesterol, Endometrial Cancer, Cataract, Asthma and many others?  Check out the information on these lovelies.  I have asthma, so I'm going to give it a try.

Where did the Fire Flies Go?

I remember growing up in New York and chasing fireflies when I was a child.   It was in the warm summer months that I sat on my front porch during the evening hours and enjoyed the festival of night lights as those little beetles produced their glow, it looked so beautiful to me. 
Now I live in North Florida and although this species likes to feed on snails, worms and other bugs etc... you would think my back yard would be heaven to them, I have yet to see a fire fly here.  My little boy has never seen an actual fire fly, and I wish so much to show him the beauty of God's creation.  I have read in several places that there is a decline on these little beetles.  It makes me sad to know that these little critters may be endangered.   Read on possible reasons for decline here.  So if you are lucky enough to have fire flies in your area, share it with us.  

Linguine Shrimp Scampi


As promised yesterday,  here is the recipe for the Linguine Shrimp Scampi which is oh so good, yet simple.  Give it a try.

Ingredients

1 pound linguine
4 tablespoons butter
4 tablespoons extra virgin olive oil, plus more for drizzling
1 large shallot, finely diced
5 cloves garlic, sliced
20 large shrimp, about 1 pound, peeled and deveined, tail on
kosher salt and freshly ground pepper 

1/2 cup dry white wine
1 lemon, juiced
1/4 cup finely chopped parsley leaves

Directions


For the pasta, put a large pot of water on the stove to boil.  When it has come to the boil,  add a couple of tablespoons of salt & the linguine.  Stir to make sure the pasta separates; cover.  When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done.  Drain the pasta reserving 1 cup of water.
Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons of olive oil over medium- high heat,  saute the shallots and garlic, until the shallots are translucent, about 3 to 4 minutes.  Season the shrimp with salt & pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes.  Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil.  Add 2 tablespoons butter and 2 tablespoons oil.  When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta and reserved pasta water.  Stir well and season with salt and pepper.



  Drizzle over a bit more olive oil and sprinkle more fresh parsley and serve immediately.
This meal is delicious you're gonna love it!  Follow the direction as is.  Enjoy!

How to Make a Storage Container

So today my little boy and I got creative again.  It was dark, thundering, and raining all day, so we stayed in and got crafty.  I made my own bag storage container and he made his own crayon storage container.

To make your very own plastic bag container you'll need the following:


A container such as this one works well.
Make sure it's empty and washed clean inside.


Remove the wrapper.

You can either use wrapping paper, scrapbook paper, or what ever pretty design paper you have. 
 Cut out a piece to place on the container. 
Make a label in your {word doc.}.  
Insert an oval shape to your word document, change the color of the line on the oval if you like;  insert a text box into the oval and type "bags".   
You can insert a little design from clip art.
Then when you are done, print it on sticker paper so it's easy to mount.
Once your label is printed, cut out your label and stick it to your design/print sheet.
You can use tape or glue to stick it unto the container.


Now you have a nice storage container for your plastic bags.

Next we have a
CRAYON STORAGE Container
You will need a coffee can or some kind of carton can.


 or
 In this case we used the carton can, no sharp edges.
My little boy used construction paper.
Let your little ones choose their own color;  measure the paper against the can, and cut it so you have the right amount to cover the can all around.

 Have your child (children) draw on the paper. 
When they are done with their art work, help them wrap the can, place the crayons inside and cover for storage. Voila!  



He now knows where his crayons are at all times and loves his new crayon box can:-)

The Garden

I have a container garden.  I chose containers due to the heavy rain we get during the summer 
months in the South.  Last year the rain ruined all my plants, so this year I took a different 
approach to gardening.  These are just some of the fruits, veggies and other plants that I am growing.

I love my peppers and my key limes!

My little boy planted Sunflower Teddy Bear seeds this year and it's his absolute his favorite.

Chicken and Dumplings

Hey, all!  I am feeling better today and back on my feet crafting, blogging, cooking and conquering motherly duties. I want to thank those who wished me well during my recovery, thank you!  I also made this delish meal and wanted to share it with you.

I love Chicken and Dumplings, do you?  This is truly a great southern comfort meal all on it's own.  I have tried many recipes loving them all, but my very favorite is this rich, hearty, creamy and sooooo full of flavor recipe.  You have to try it, this is true southern flavor.  The following recipe makes 8 servings:

  • 2 pkgs.(7.5 oz.ea.) buttermilk biscuit mix.
  • 2 Tbs. bacon fat or olive oil
  • 5 fresh carrots, peeled ans sliced
  • 3 thick celery stalks, sliced
  • 1/2 cup sliced green onions
  • 2 cloves garlic, peeled and minced
  • 2 cans (8 oz. ea.) cream of chicken soup, with equal parts water added
  • 2 cans (8 oz. ea.) cream of celery soup, with equal parts water added
  • 2 bay leaves
  • 2 Tbs. chopped fresh tarragon (optional)
  • 1 cup peas and /or pearl onions
  • 2 whole roasted chickens, cut into 8 pieces each
Prepare biscuit mix according to package directions.  Let sit at room temperature while prepping (so dumpling will be fluffier).  In a dutch oven or deep pot over low heat, cook bacon fat or oil  for 30 seconds.  Add carrots; cook 5 min.  Add celery and green onions.  When celery is translucent, add garlic and both soup mixtures.

 2 Bring mixtures to a light boil.  Add bay leaves, tarragon, peas and pearl onions.  When liquid returns to a boil, using teaspoon measure, drop biscuits into liquid.  The dough will float to the top.

Cover tightly with lid; let simmer 15 min.  Take out 1 dumpling to check if it is done (inside will be fluffy).  Divide dumplings evenly among 8 bowls.  Add 2 pieces chicken to each.  Ladle liquid over piles.  Sprinkle with parsley, if desired.  Voila!  If you try this recipe let me know what you think.
